“Slow Food” nedir?

“Slow Food”, “fast food”, hızlı yaşam ve yerel yemek geleneklerinin kaybolmasına karşı bir tepki ve bilinçlendirme hareketi olarak 1989 yılında kar amacı gütmeyen bir hareket olarak Italya’da, Carlo Petrini tarafından başlatılmış. Bugün tüm dünyada 850 yerel convivium ile yaklaşık 80,000 üyesi bulunuyor.

Özellikle aşağıdaki sorular “Slow Food” hareketinde önem taşıyor:

  • Yemeğimiz nereden geliyor; ürünler hangi tohumlarla yetişiyor?
  • Yemeğimizin tadını oluşturan etmenler nedir?
  • Yemek seçimlerimiz kültürümüzü nasıl etkiler?

Slow Food, görülen yemek kısmı dışında, aslında bir insan hakları hareketi. Petrini, sadece doymak değil, lezzet almanın da bir insan hakkı olduğunu belirtiyor. Son yayınlanan “İyi, Temiz ve Adil” adlı kitabında yiyeceklerin bu üç karaktere birden sahip olmasının kültürel ve etik unsurları tartışılıyor.Carlo Petrini ve ekibi, dünyamız için endişe duyan ancak umudunu yitirmeyenlerle tanışıyor, fikirlerini aktarıyor ve sürdürüyor yolculuğunu...

V. Uluslararası Slow Food Kongresi



Meksika – Puebla, 8-11 Kasım 2007

2003 yılında Napoli’de gerçekleşen kongre sonrasında, bu kez Avrupa kıtası dışında, toplam 49 ülkeden yaklaşık 500 delege, Beşinci Uluslararası Slow Food Kongresi’nde Meksika’nın Puebla kentinde bir araya geldi. Tangör Tan ve Cem Birder, Türkiye adına katılım gerçekleştirdiler.

Puebla, başkent New Mexico’nun 130 km güneydoğusunda yer alan toplam 1,5 milyon nüfusa sahip, İspanyol mimari stili, renkleri ve coğrafyasıyla ayrıcalıklı bir şehir; 1987 yılından itibaren UNESCO tarafından Dünya Mirası Şehri kapsamına alınmış.







Meksika’ya özgü Talavera seramikleri yaşamlarının farklı alanlarındaki renkliliği ve çeşitliliği simgeliyor. Binaların canlı renkleri, vazolardan sarkan çiçekler, duvar seramikleri, kiliselerin durmak bilmeyen çan sesleri ve yerel dillerinde süregelen şarkılarda Puebla sokakları ve koşuşturan insanları hep enerji dolu. Hindistan’dan sonra kültürel ve etnik çeşitlilik açısından dünyada ikinci sırada olan Meksika’nın bu şirin kentinde gerçekleşen kongre herkesi derinden etkiledi.

9 Kasım Cuma günü başlayan toplantılar, 11 Kasım Pazar öğle oncesi sonra erdi. Toplantılarda ele alınan konuların, sunumlar arasındaki çay molalarında veya Puebla’lı müzisyenler eşliğinde yenen akşam yemeklerinde, katılımcı delegeler arasında sıcak paylaşımı, Slow Food ağında güçlü işbirliklerinin ve sürdürülebilir uygulamaların önemli sinyallerini oluşturdu.

I. gün / Cuma

Açılış konuşması öncesi gerçekleşen “yuvarlak masa” toplantısında yer alan Luis Alberto Vargas; Meksikalı bir antropolog, tıp adamı ve doktoralı bir biyolog. Sunum sonrası, dünyada tohum kanununa bağlı gelişmeler hakkında görüşlerini sorduğumda şöyle yanıtlıyor: “Konu şu anda tüm insanlığı yakından ilgilendiren bir sorundur. Endüstri, belli tohumları belli amaçlar için geliştirir. Ancak burada iki noktayı unutuyoruz: 1) insanlık bugüne biyoçeşitlilik sayesinde geldi. 2) gıda sadece miktara bağlı bir üretim için değil, geleneksel yemekleri göz önüne alarak tohum çeşitliliği içermesi gereken bir mevzudur. Örneğin, Meksika’nın temel gıdası olan Tortilla, geleneksel bir mısır türünden yapılır; tüm dünyanın bildiği ‘popcorn’ dediğimiz tür mısır ile yapılamaz. Yüzyıllar boyu çiftçiler tohum çeşitlerini kendileri seçtiler. Aksi takdirde sadece kalitesiz gıda değil, lezzetsiz gıdaya da mahkum oluyoruz. Slow Food’un da dediği gibi, ‘yemek, aynı zamanda keyiftir’. Yoksa, köpek maması gibi kutuda, besleyici değerleri standardize edilmiş gıdalar almak değil mesele.”





Kongre açılışını yapan Carlo Petrini, yaklaşık 1 saatlik konuşmasında dikkatleri özellikle eko-gastronominin yeni sınırları üzerine çekti. Çevre koruma bilincinde, yerel gıda toplulukları ve yerel ekonomilerin bir araya gelerek kürselleşebileceği mesajını verdi. Petrini genç öğrencilerden geleneksel çiftçilere ve bilgilerine (bilgeliğine) saygılı davranmaları gerektiğini söylerken, onlardan yerel halka ait kimliklerinin bir parçası olan hikayeleri her zaman dikkatle dinlemelerini hatırlattı. Geleceğin güvencesi olan gıdaların farklı bir anlayış temelinde algılanması gereğini vurgulayan Petrini, çevre koruyucu, sosyal adalet ve yeni bir gıda kültürü anlayışının vazgeçilmez olduğunu söyledi. Konuşmanın çeviri metni yazının son bölümünde İngilizce olarak yer almaktadır.

Öğle yemeği, Jardin de las Trinitarias’da (kongre salonunun arka bahçe bölümünde) CIELITO LINDO (Quirino Mendoza y Cortes) parçası eşliğinde yendi.

Öğleden sonra ilk sırayı Prens Charles adına gelen konuşmacı aldı. Okunan mektupta, tarımın kayıt altındaki en önemli etkinlik olduğu, endüstriyel tarımın biyolojik ve sosyal topluluklar üzerinde olumsuz etkileri olduğu, bu gidişata ‘dur’ dedirtecek bir kararlılık olması gerektiği ifade edildi. Yazıda ayrıca köylü tarımının biyoçeşitliliğin yegane güvencesi olduğu vurgulandı.

Slow Food yetkilileri tarafından yapılan bir sunumda, aşağıdaki rakamlar açıklandı:

· Etkinlik gösterilen ülke sayısı: 123
· Terra Madre’ye katılımcı ülke sayısı: 150


Brezilya’dan gelen delege, yapmış oldukları yerel Terra Madre’yi sundu. Bakanlık desteğini alarak gerçekleşen organizasyonda, Temmuz ayından Eylül ayında dek geçen süre içinde hazırlıklar tamamlandı. 70 gıda topluluğu, 10 üniversite, 50 gönüllü, 15 şef ve toplam 250 kişilik ekiple toplam 3 günlük bir etkinlik olarak gerçekleşti. Latin Amerika’dan çeşitli Slow Food temsilcileri programda yer aldılar.

Alberto Jimenez Merino, Kırsal Kalkınma Bakanlık müsteşarı, Puebla bölgesinde sürdürdükleri yerel ürünlerle (hayvanlar: 43 çeşit, semillas: 33 çeşit, sürüngenler: 29 çeşit) beslenme projesi hakkında bir sunum yaptı. Bu tarım ve hayvancılık ürünleri özellikle lokanta sahipleri büyük ilgi gösterdiler.

İtalya’nın Toskana bölgesi Slow Food Başkanı Claudio Martini yaptığı sunumda öncelikle çalışmalarında, diğer yerel dernekler ve yerel yönetimlerle yapmakta oldukları işbirliklerinin önemine işaret etti. Martini, çalışmaların ve oluşturulan farkındalığın bir ince damardaymışcasına yavaş ilerlemesinin bezdirici olmaması gerektiğini söyledi. Yapmış oldukları çalışmalar arasında özellikle GDO’lu ürünlerin Toscana bölgesinden çıkarılmasının çok değerli bir başarı olduğu aşikar. Bu çalışmaya paralel olarak, genel bir uygulama olarak, AB için gerekli yasal düzenleme çalışmalarında Vandana Shiva ile işbirliği yaptıkları ifade edildi. Bu paralelde, Claudio Martini tarım, iklim değişikliği ve biyoçeşitliliği içeren bir manifestonun kabul edileceği bilgisini verdi. “Tohumlar sadece onları üreten çiftçilere aittir”. 3000 üretici ile 80 proje sürdürdüklerini ifade eden Maritini, bu gerçeği (tohumların sahipliği) kabul ettirebilmek için işbirliklerinin öneminin altını konuşmasının sonunda bir kez daha çizdi: “Yeni bir insanlık anlayışına ihtiyacımız var; 21. yüzyıl yeni insanlığın birliktelik zamanı olmalıdır”.

Daha sonra söz alan İsveçli temsilci, ülkelerinde 220 üretici ile gerçekleştirdikleri Terra Madre hakkında bir film sunumu yaptı. Proje maliyetinin 65,000 Avro olduğunu belirtti.

Amaranth projesi 1980’de başladı. Çölleşme tehditi altındaki bölgelerde, yağmur suyunu tutabilir şekilde, amaranth yetiştiriciliği yapıldı. Carlo Petrini projeyi 2001 yılında gördü. 1,100 üye ile dünyanın en kalabalık convivium’u oluşturuldu.


II. gün / Cumartesi


Toplantı, Slow Food manifestosunu yapan kişinin toplantıya katılanları selamlayan belgesel filmi ile başladı.

San Fransisco’dan katılan Michael Dimonck (Uluslararasi USA Komite üyesi) delege sunumunda bölgesindeki gıdaların %95’inin endüstriyel temelli olduğunu söylerken, bilinçsizce yapılan tarımsal faaliyetlerinin yeraltı sularını kirlettiği uyarısını yaptı. Bunun yanında konvivium etkiliği olarak yakın civarda bulunan çiftliklerde başlatılan “farm mill – çiftlik değirmenleri” projesi hakkında bilgi verdi.

Darina Allen (Chef - İrlanda), tarım ve gıdalarımız hakkında yapmakta oldukları eğitim programlarını anlattı. Dublin’de mevcut 3 konviviumun okullar ve öğrenciler ile yaptıkları projeleri, okul cağı çocukların “yiyeceklerimiz nasıl üretilmiştir” başlığı altında şeflere ve çiftçilere yapılan ziyaretleri aktardı.[konuyla ilgili elimde bir adet broşür mevcut] . Bunun dışında West Crok Üniversitesinde gerçekleştirilen “Food Course” hakkında kısa bir bilgi verdi.

İtalyan temsilci Jose Toriaga, Üretici Pazarları (farmers markets)’nı sundu. Toskana ve Sardunya’da gelişim gösteren pazarların dünyanın farklı bölgelerinde de kullanılabilirliği konuşuldu. [İtalyanca ses kaydı mevcut]

Cogomo Mojoli (Gastronomi Bilimleri Üniversitesi Yönetim Kurulu üyesi) üniversitenin amacı hakkında bir konuşma yaptı. Üniversiteden mezun olan öğrencilerin kesinlikle Gurme olmadığın, Gastronom olarak yemek ve yiyecek, ürü ve üretim, biyoçeşitlilik, çevre ve ziraat, sosyal bilimler, fen bilimleri alanında daha geniş bir bilgiye hakim olarak yetiştiklerini, topraktan masaya, üreticiden tüketiciye zinciri oluşturan her bir birim hakkında eğitildiklerini, gelenek ve göreneklerin günümüzde yeni jenerasyonlara öneminin anlaşılmasının sağlanması ve korunması konusunda eğitim gerçekleştirdiklerini belirtti.

Raul Hernandez Garciadiego tarafından, Meksika - Terra Madre projesi hakkında sunum. Meksika, Hindistan’dan sonra dünyanın ikinci önemli kültürel ve etnik çeşitliliğine sahip ülkesi.

Torje Inderhaug (aslı Kanada’da olan) Norveç’teki econo-museum çalışmaları ile yerel bilginin ekonomik dönüşümü ve sürdürülebilirliği sağlanması, kültür, ekonomi ve turizmin birbiri ile olan ilişkisi konusunda bir sunum gerçekleştirdi. Müze olarak, “Norwegian Working Museum“, “The Canadian Economuseum Concept” örneklerini gösterdi. Kanada’da şu an için 43 economuseum olduğunu ve el sanatları ile zirai yiyecekler ve ürün sunumu yapıldığını aktardı. Buna örnek olarak “Bal Müzesi“ hakkında birkaç resim gösterdi.

Woody Tach, “Slow Money and Primal Forces of Nature” başlığı altında paranın ezici ve acımasız gücüne yenik düşmüşlerin iş dünyasındaki anekdotlarından örnekler sundu.

Dessislava Dimitrova (Botanist), Bulgaristan SF etkinliklerini, özelikle kaybolmakta olan Karakaçan koyunculuğu ve yöresel peynirciliği anlattı. Bir tür mavi peynir türü olan peynir son yıllarda kaybolma tehdidi altında. Dimitrova, konuyla ilgili bir destekleme projesi sürdürüyor.

Mariano Gomez (İspanya Slow Food), İspanya Slow Food olarak bugüne kadar yapılanları aktardı. Şu an için İspanya’da 18 konvivium olduğunu ve bu konviviumlarin çiftçiler ile aşçılar arasında bir köprü olduğunu belirterek yetişme çağındaki çocuklar için yaptıkları eğitsel projelerden bahsetti. http://www.slowfood.es/

Cinzia Scaffidi (Slow Food Centro Studio Koordinatöru), GranOS projesi hakkında bilgi verdi. Yeni başlatılmış bir proje olduğu için proje ile ilgili daha ayrıntılı bilgileri gelecek haftalardan itibaren edineceğiz.

Paolo di Groce (Slow Food Uluslararası Ofis Koordinatörü); Tüketicinin (yan-üreticinin) daha bilinçli olması, kimyasallar içeren gıdaları raflarda bırakması lazım. Ancak bunu yapmıyoruz. Keyif yemek için önemlidir ancak sağlık da çok önemlidir.

Meksika’nın güneyinde yürütülen Tabasco projesi ne yazık ki son sel olaylarından büyük zarar gördü. Konuyla ilgili maddi kayıplara karşın birçok Slow Food ülke merkezi yardımlarda bulundu.

Patrick Mulvany, UK Food Group Yönetim Kurulu Üyesi, gıda sisteminin öncelikle doğa ile uyum içinde yürümesi gerektiğinin altını çizdi. Gıda güvenliğinin çok önemli mesele olduğunu ve sağlam temel politikalar ile bunun sürdürülebilirliğin sağlanması gerektiğine işaret etti.

Slow Food Fransa temsilcisi özellikle AB içinde OTP (CAP)’na karşın sağlam destekler oluşturulması gerektiğini ifade etti.

Slow Food Lübnan temsilcisi Barbara Massad (editor ve fotoğrafçı); Lübnan’da var olan biyo-kültürel zenginlik, pazarlar ve çocuk eğitimi konusunda bir konuşma yaptı.

Arjantin’den Hugo Cetrangolo yerel üretim yerel tüketim döngülerinde üniversite desteklerinin fikirlerin yayılabilmesi açısından önemli olduğuna dikkat çekti. Ayrıca Slow Food’un tüm Latin Amerika ülkeleriyle güçlü ilişkililer içinde olmasını önerdi.

CittaSlow, şehirlerin Slow Food felsefesinde, yerel ürünlerin desteklendiği, özgünlüğün korunduğu bir yaklaşım. Dünyada 90 kadar noktada geçerliliği mevcut. Almanya, Norveç, İngiltere, Avustralya ve İspanya bu noktaları (şehir, bölge, vb) barındıran ülkeler arasında.

Gastronomi Bilimleri Üniversitesi’nden 10 öğrenci kısa birer bildirge sundular.

ABD’den “Real Food Challenge” grubu mensubu öğrenciler kısa birer bildirge sundular. Kendi üniversitelerinde yapmış oldukları bahçe üretimleri, eğitim programları, yayınlar ve ABD’de gençlerden başlamak üzere tüm kesimler arasında “iyi gıdanın” farkındalığının artırılmasına yönelik çalışmalar özetlendi.


III. gün / Pazar

Sabah saatlerinde Slow Food Puebla organizasyonu sorumlularından Teresa Diestel tavsiyesi üzerine, Puebla’ya 30 km mesafede bir çiftlik evini görmeye gittik. 16. yüzyıl mimarisi bu içinde avlu barındıran bu çiftlik evi halen 8 aileyi barındırıyor.

Kongrenin kapanış konuşmasında Carlo Petrini özellikle aşağıdaki noktaları vurguladı:


- Daha derin ve giderek daha derin düşünmeli ve davranmalıyız.
- Sosyal, politik ve felsefi olarak güçlü olmalıyız.
- Silahımız (güçlü yanımız) kalbimiz ve davranışlarımızdır.
- Sahip olduğunuz ortak duygular, bu kongrede ve Terra Madre’de temsilcisi olduğunuz binlerce insanla benzerdir.
- Büyüdükçe daha çok önem kazanacağız. Evet büyümek zordur, ve büyüme krizleri yaşanabilir ama bundan korkmamalıyız.
- Birbirinle ilişkili farklı projelerle büyük bir güç oluşturuyoruz.
- Büyümek bize güç ve dolayısıyla, özgürlük kazandıracak.
- 85 yaşındaki profesör arkadaşımla sohbet ediyorduk. Dünyadaki iklim değişikliği gibi sorunlar hakkında endişelerimi dile getirdiğimde, oldukça sakin yorumladı: ‘insanlık her zaman hatalarını düzeltmek için bir yolunu buldu, yine bulacaktır’. Evrimleşmek, olgunlaşmak işte budur.
- Bizler geleneksel bilgiyi tekrar yeşertmeliyiz.
- Ekonomi etik değerlerden artık koparılamayacak. Gandi de bu konuda çok inançlıydı ve ekonomik ve etik değerlerin birbirlerinden ayrılamaz değerler olduğunu savundu hep. Keşfedebileceğimiz yeni bir şey yok.
- Gerçek gücü Terra Madre ve onun sağlayacağı ağ ile yakalayacağız; para ile değil.
- Kurduğumuz, hayal ettiğimiz semboller birgün gerçeğe dönüşecek.
- İtalyan bir organizasyonu daima felaket yapar. Meksikalı da öyle, berbattır. Ancak bir mucize gerçekleşti ve bir İtalya-Meksika ortak organizayonu, Puebla’da muhteşem gerçekleşti !
- Bir dahaki kongrede Uluslararası Slow Food Başkanlığı’ndan çekileceğim. 2. başkanlıklara, Vandana Shiva (Hindistan), Alice Waters (ABD) ve halen Gastronomi Bilimleri Üniversitesi’nin 20 yaşındaki öğrencisi olan John’u (Kenya) seçtik.
- Gerçek liderler geri adım atabilmeyi bilirler.
- Terra Madre 2008’de daha çok genç çiftçi, genç aşçı görmek istiyoruz. Daha az konuşmak ve daha çok yerel müzisyenleri dinlemek istiyoruz ! Rüyam budur.

Petrini’s Opening Speech(*): 2007 International Congress

*this speech is written from notes taken during simultaneous translation. It is not a copy of exactly what Carlo Petrini said.

Dear Delegates,
We’re here gathered for the 5th International Congress for Slow Food. In opening and beginning this first session, I would like to share the pleasure with you of being in this extraordinary land. It is rich in biodiversity, and has great culinary tradition and gastronomic knowledge. I would like to pay tribute to the thousands of farmers who have allowed this biodiversity live on in these days.

Nevertheless, today my heart is filled with sadness because wonderful regions like Tabasco have been plagued with the great disaster of pollution. In the past a lot has been said of New Orleans, but we must realize that the disaster of Tabasco is worse than New Orleans – from the point of economic disaster and destruction of the quality of life. I would like the point of this congress to be an expression of our solidarity with these people, with a part of our heart to sympathize with that part of Tabasco that is part of Terra Madre – our heart is with them.

We often say that Terra Madre is the gathering of our 2,000 communities, we often don’t realize what it is, what these communities are. The Vera Rosa community expresses the power of Terra Madre. This small community provides work to over 500 families. When we say 2,000 food communities in the world, then you can clearly understand what Terra Madre is. I invite all the communities of Terra Madre in the world, to donate with generosity, please help in a real tangible way to this community – all for one and one for all. We all take responsibility for revitalizing these communities. ------- (woman didn’t get the name) will be here tomorrow to explain the disaster of this community. We must be active; solidarity does not work through words but through actions. We must act immediately. If each one of us does what we can do with our own resources, then I am sure we can do what we did to help New Orleans. I would like this to be the first formal act of our congress.

The 4 years since the last congress have been vary intense and meaningful years – no doubt about that. We decided to come here in the American Continent to convey a very strong message. Because we are now following a new path, a path that has been must faster than what we are used to. We have created the first University of Gastronomic Sciences in the world. We have created the concepts of Good, Clean and Fair to describe food quality. We have gathered at Terra Madre. Our snail is now recognizable in all parts of the world. Our congress will have to design and outline a strategy that will guide us in the following years. Objectives, strategy, how we will be structured, and how we can preserve the growth of this organization while preserving what we have been in the past, but still be based in the spirit of joy and sometimes craziness -characteristics which have always been at the basis of our work.

I hope this congress will be useful for you and your communities and the places you return to for work. I hope it will be the starting point for a new extraordinary adventure. We now define quality with the 3 characteristics. It cannot be quality without one. Good, Clean and Fair for the environment, but also in social justice. We had 3 extremely interesting speeches in the opening round table session. And we heard that Good, Clean and Fair cannot be divided - this is how we must work. We have to work hard in the future to overcome the concept of consumer and give a new citizenship to co-producers – not as passive subjects that to a certain extent are only passively influenced by this through advertising, but active subjects that get in touch with producers – a world that in its nature self-generates. We don’t need to rule Terra Madre; it will guide us with the sprit, the open- minded approach. Not only focusing on the gastronomic part, but being more open-minded in considering all aspects of food culture: music, arts, sciences. We have not yet fully understood the great importance of food that has a great centrality.

Vandana says that in all spiritual Indian texts: from food all living creatures take shape. They depend on food to live and then they get transformed into food after death. The centrality of food calls for respect and it must be the main interpretation through which we understand the world, so that’s why we do reconfirm the importance of our pounding manifesto. When it was written in 1989, it already included some issues that are still very modern and valid. We don’t want to change it because it includes everything. Our development and transformation included the evolution that we have witnessed in the past 18 years. I would like to mention 4 parts of this manifesto and how they are at the basis of our current Slow Food projects.

Referring to the first sentence that states that productivity is seriously threatening the environment and landscape. In 1989 the ecologist’s movements were already known, they were raising awareness for this, but not many people knew that food production was one of the threats responsible for this destruction. The UN put forth a report explain that food production, aggressive use of chemicals, etc, negatively affect soil fertility. Intensive farming, transport, and other such human activities that are part of this type of production, are leading our world to a critical situation – we need to find solutions or this process will be irreversible. So, food production and productivity – we must realize the crisis of this concept of development – linear straight development which establishes which are the countries that are underdeveloped. The fundamental model of those countries where productivity and economic development are used as the main examples for growth – because of that, we are in a critical situation. We have to go back to the original concept of civilization and strengthening local communities – not this linear line of development. The concept of sustainable development is an oxymoron and seems close to criminality now, but is associated with development. So, in the western world we should be surprised if food production damages nature, but now not all of us are.

Nature is exhausted. Nature should establish limits to the economy and not vice versa- not the economy as looking at it as an endless resource.

Just remember what Francis Bacon said some centuries ago, nature is a prostitute. We must tame it. We must penetrate its secrets and chain it according to our desires and interests. This seems crazy and mad, but the same person when talking about method, explains that the mission of the modern human being is to be the master of nature - without dogmas, nature is nothing but a wide range of materials that must be transformed into wealth. What can we expect from such ideological method that has pervaded 3 centuries? Our intellectuals think of nature as a prostitute! Such intellectual traditions are ignorance from a certain point of view. If this is still present in our culture, in the core of corporations, of politics, of those egos determining our humanity, we must understand that the world we want to save and rescue is really in a dangerous situation.

We are tired. We are exhausted of politics that are based on words but do not turn into facts and action. We are on the brink of disaster. And everyone is unhappy with that. I don’t want these silly visions to be promoted more and more and to repeat the mistake of a North African minister when he said nonsense.

I would like to mention this. This minister of agriculture of North Africa was stressing the difficult economic situation of last year, and he said, ‘last year we were very close to disaster, and this year we have made a great leap forward.’

Most of mankind is living on the brink of our demise, but one foot really is forward. Remember the last Nobel prizes awarded for peace and also for the promotion of social justice? This strength we need in changing and transforming our philosophy, there are many politicians aware and more focused on these issues. The only hope is that these theses of nature as a prostitute, the violent ones, will be overcome.

How could we react to corporations? The solution is in local economies. Local economies will save
us. Not only those of indigenous populations, but also those who protect traditional knowledge and wisdom. Our manifesto in 1989 said we started form local cuisines – and now we are enlarging that into economies. Now we must transform that into action. Considering local economics as the rescuers is a cultural choice much more than economic. We must focus on our real goals and targets. Nowadays, there must be an understanding that our association will be in harmony with all people working at the local level - Safeguarding customs, traditions, stories. There is no economy without local culture. We must preserve it and keep its memory alive.

Local economy is the one that can help us analyze and study rivers and resources, and how we can provide power. If it is possible to have windmills, etc, and try to avoid the construction of damns, which are disgusting, we should look into that. Protect rural lands in order to keep them rich in live. Prevent fires; pick wild fruits, every rural area will be equipped with the resources to keep people in the country side. Traditional farming and products will be developed in the best ways. Every type of manufacturing will be developed in accordance with the local and neighboring communities - according to the specificity of their traditions.

Just see how much the local economy can do. Local economy can be matched with everybody’s life. It can be a fertile activity of our local convivia. It is one of the perspectives that can really help us. But that was already mentioned in our founding manifesto.

You see in this concept of traditional knowledge is the hubris at the basis of biodiversity. Some journalists have asked me what the best way is to preserve biodiversity. The best way is with the preservation and respect of traditional knowledge that has for centuries made a lot of generations survive. So, we need to bring them back to life. Look to the best in order to protect the future in an active and constructive manner. Traditional knowledge is in the hands of the humble people. We must be brave enough as a movement in every part of the world, to support the scientific knowledge of farmers, fishermen and breeders because they have the methods, and we can strengthen them by taking them to universities, leading to a place where farmers can speak at the same level as academics.

The fact of not having self esteem is a fundamental disaster. The United States has a mass of farmers from Mexico. They leave their land to be what? Exploited. These people are taking their scientific knowledge with them to another country. Once they leave, Mexico is losing its intellectual heritage. These are the intellectuals of the land as defined in Terra Madre. How can we make sure that the young go back to the land? This is just wishful thinking in today’s worlds. Agricultural politics in the world are just bollocks. If a young person thinks it is better to sit in front of the computer rather than get out and touch the land and be in nature then there is not hope for the future.

We tried healing the wounds by putting cloths on these hurt hearts. The young people must be brave, but also we must make them understand that they can engage happiness through working in the land, in a clean matter, and be gratified from an economic standpoint. But no politicians really go into the depths of this issue. The population of those in the land is over 60. Young people do not want to become farmers. If after this congress we just leave with this idea in our heads – that young people must go out to become intellectuals of the soil - then it is the greatest congress ever. We have to go back to fishing the seas and transforming food – otherwise we don’t have a future.

I said that we are here in this beautiful land, of course since your are here you have decided not to be Eurocentric and have left the continent. So why Mexico? Those with evil souls can think that I just like the mariachi, the music, the siesta, the long times. That is not the reason why we are here in Mexico, that is why we are here in Puebla. I had the opportunity to take two trips, and I had the luck to adore the moral and human beauty of the Mexican people. First I noticed how the women work and transform maize. In October, Mexican women gather a few maize crops and while they are still soft they soak them in water. Then they also serve them on the cob as elotes. The remaining crops are left on the stalk until they are entirely mature, then after they dry and mature they are soaked in a mixture of chalk and ….. Then they are called natch tamal – then it is put on a smooth stone and the mix becomes masa. IT is a dense pasted used to make tortillas, then the dried mature maize can be transformed into a powder to make the most popular drink in Mexico (various names from different parts of country). Over 800 specialties in Mexican food culture are produced form maize – by women. You will see that in the historical center of Puebla – McDonalds, Pizza Hut, and KFC are there because of economic strength - but in any courtyard, you will see women preparing tortillas, and this economy is very strong but women do this autonomously. It is a female run economy – it is not taken into account of the GDP calculations. We will see university students eating this food prepared by women at any time – is this a subsistence economy? They say it is a marginal economy. THIS IS THE LOCAL ECONOMY. THIS IS THE ECONOMY WHICH MAKES THE COUNTRY STRONG.

In Puebla, women work autonomously in the streets. They produce tamales etc. these are the results of many combinations. They work in the corner that belongs to women – on the patio between the house and the milpa. Milpa is another concept that economist believe is an old-fashioned idea, mind you it is here and has been here for thousands of years. They are building again these milpa – they are small pieces of land where maize, beans, pumpkin, and chile are cultivated. Over 700 different combinations of crops are commonly grown. It is a mixed agricultural economy that supports a family – and it still works for many families. Why should we give Nobel prizes to economists, and not to agricultural economies that have invented such things as the milpa – how extraordinary is the milpa!

The economists will say it is small and not part of the GDP calculations. But the milpa will rise again. A new agricultural economy will rise, maybe in a more modernized way. If the women are still there transforming maize despite the strength of linear development and McDonalds, it’s because this is deeply rooted in culture – it is a part of cultural identity. I asked a farmer why the homemade tortilla is better than the industrial type from American maize. He said a word that no longer exists in the dictionary. It is used in Cervantes, and I believe and I am a Don Quixote myself, it is “engundia”. Nobody uses it anymore, but read Don Quixote and you will find it, it is the ‘sacred passion’. This sacred passion makes food better tasting. Try the difference yourself. This word must enter the world of politics, of art, of society, in our daily life. I think that our manifesto already contained these things – histories of products and knowledge. The Terra Madre network is going to create sub-networks, but also poets, and others that with it will develop in an intensive and extensive manner. This is what we want to be.

The right to travel is something I mention as well. This is necessary to understand the world. It is a prerequisite. I know that the students that are here will present to the congress for students to travel and work in the economies. Students, as soon as you will announce in the network that there is the opportunity to visit another economy and work with producers – you will be amazed by the amount of responses of those who want to be involved. It will be even crazier than Terra Madre. This network of young travelers will be a network of planetary happening. We will make sure that his will be a fertile experience. This experience of life will have to be a training and educational opportunity.

There must be in this right to travel – there must be the component of young farmer. They have to be included. We must find the economy so that these young farmers can travel. The right to travel is fundament for young people – it is a sacred right. When you meet different cultures you become a richer person.

This is the exciting container of ideas and meaning that we have built. Cinzia talked about the complex basis of our activities. Our congress has to fine tune all the association’s issues of this complex machine that we have built. After Terra Madre, the slogan that hammered us for three years was how to bring together the people of Terra Madre with the people of Slow Food - as if they were two distinct worlds. During these past two years this has changed. Many food communities have asked to become members of Slow Food. A community just miles from here has asked to become members – the first farmer convivium. Out of 8 delegates – 7 are women.
Lets open the doors to our movement. Only fools would think we would put our efforts toward an organization of gourmets. We want to be an international organization of gastronomy – this includes the very social component – chefs, farmers, and teachers. We must be open! This will require on our part a lot of effort.

You have no idea what you will have to do for this in the future. Opening to this part of the world means changing. Terra Madre needs Slow Food and Slow Food needs Terra Madre, now we will also agree on a new statue during this congress – devices that define the life of the movement. I thank all those that worked on the statue. Statues are instruments that allow us to move from one congress to the other one. They must be lived and practiced with intelligence and common sense. So the most important thing is that we build new partnerships, new alliances. If we are not ready, we will make mistakes – oh well – we need to opened up and go along this path. Following a joyful path based on brotherhood, it should never be place on pre-verification.

If in a convivium there are arguments over power then the virus of bad management has entered our organization. It is not about who will be the leaders and sub-leaders – let’s move on side by side. To do that we need to restate one thing – which refers back to what I state in the opening document. We still need to use the word convivium. We were born as convivium, and we will stay convivium – because it means conviviality. Let’s take the two meanings - historical of sharing, and the extremely modern meaning that is conviviality in a society where every individual has the possibility to obtain his or hers needs. It is implemented only in a respectful manner.

Sharing and Respect – bring the two together and let’s think about how valuable it is to be a convivium – we will preserve this. We will have to practice conviviality – we will have to build an anarchic association. And when I say austerely strictly and anarchic society, strictness does not mean clamming up. Austerity is the basis of friendship and sobriety. The autonomy of this movement makes this anarchic – not in a political but in a libertarian way. We don’t need the ambition to be a political party. We must be like yeast –we are not scared that our ideas are stolen from others – if they are good they can use them. We don’t have power ambition. This is not our organization. Let our ideas be free. This is emotional intelligence - if there is not this amongst us, the noble value of our organization will erode.

What does it mean to be an association? Beyond the normal definition, what follows the tip of the iceberg means much more than that. It means being both a rational project, but often, that is pushed by non rational impulses – such as the wish to access life, to have hope in life, the need to socialize, the need to be of use for others, and the dissatisfaction one finds in the world of political powers. The seed of craziness in associations is what we should preserve – healthy foolishness. We must see the value of the organization in these terms. This is what makes it pleasurable and enjoyable to meet. This is a slow meaning of work – find new paths.

Last year, I closed the congress of Slow Food Italy, and I left the presidency in young and strong hands. And as I had more time, I decided to cultivate my vegetable garden. This has deeply changed my life. Now I wake up at 5am and look after my small plants. I plant the seeds and create the organic compost. I wasn’t used to working the land but I have some secrets. I plant the tomatoes on the wall close to my house, and I look for chicken manure so I can eat my tomatoes before anyone else. I go to take horse manure to cultivate my vegetables during the weekends. The law of practicing has also changed my health.

I think about what a great monk of the 6th century, Augustine from Agrikronsisis, said - that when lies are simple lies, don’t do any harm; they are closer to dreams really. If the person who tells the lies at one point believes they are true, than they can even become reality. When in Naples I said ‘see you in Puebla’ – I told you a lie because I wasn’t sure we would meet in Puebla. The dream has turned into reality. Well, I would like our association to keep believing in craziness – we must be joyful and preserve our self irony and being happy people – this is the only antidote for a bighead and for friendship. This is the basis of Slow Food.

V. Uluslararası Slow Food Kongresi Bildirgesi (*)

Yirmi yılı aşkın süreyi geride bırakan İtalya merkezli derneğin, uluslararası oluşumunun on sekizinci yılında, Slow Food hareketi beşinci Uluslararası Kongresini Meksika’nın Puebla kentinde kutladı.

Doğru yaşam hızını arayan, yemek keyfini özgün tarihsel ve yerel ilişkilerde bulmaya gayretli insanlardan oluşan bu hareket, yıllar içinde farkındalık duygusuyla birlikte, tahlil ve yorumlama güçlerini önemli seviyede arttırdı.

1989 yılında yayınlanan Slow Food Manifestosu’na uyumlu olarak, yapabildiğinin en iyisi doğrultusunda iyi, temiz ve adil gıdayı tanımlayarak, takip ederek ve destekleyerek, taahhüt ettiği bu yolculuğu “ruhundaki” çeşitlilikle beşinci kongresinde de sürdürüyor.


I.

Bilgeliğe sahip çıkmak: Tarım, hayvancılık, balıkçılık, avcılık, toplayıcılık ve gıda üretimi alanlarında geleneksel bilginin korunması, muhafaza edilmesi, değerlendirilmesi ve kullanımı için, Slow Food artan bir hassasiyet taşımaktadır. Bu bilgiler sadece kendine mevcut bilgeliği temel alarak gelişebilir. Bu akış, doğa içinde uyum ve eşit şartlarda bir ilişki sağlayan bilginin hafızalardan kaybolmasına sebep olacak şekilde çeşitli engeller yaratılarak veya mülkiyet haklarıyla hiç bir zaman kesintiye uğratılamaz.

Yerel yemeklerle yola çıkarken, kendimizi yerel kültürlere, yerel ekonomilere ve yerel hatıralara adamayı sürdürüyoruz. Her canlı ve her etkinlik, belli bir coğrafya sınırında sürdürdüğü evrim sürecinde, hayat enerjisi ve amaçlarını oluşturur.

Gıda, müzik, el sanatları, dil, ananeler, masallar ve efsaneler toplumun ve ekonominin bir parçası olarak yeniden değerlendirilebilmelidir. Buna benzer olarak, üretici pazarları, küçük ölçekli kaliteli ürünlerin değerlendirilebildiği daha güçlü yerler halini alabilmelidir.


III.

Çevre ve doğa örtüsü karşısında, verimliliğin yanlış anlaşılmışlığını göz önüne almak: Yaşamsal refahımız sadece nicesel (miktara bağlı) ölçümlemelerle, gezegenimiz ve diğer canlıların refahını göz önüne almadan hesaplanamaz. Bu doğrultuda Slow Food, çevrebilimciler, araştırmacılar, aşçılar politikacılar, üreticiler ve bize katılımcı olmak isteyen herkesle, dünyanın yegane yaşam kaynağı ve bizler için, bugünkü ve gelecek nesiller için vazgeçilmez bir keyif olduğu gerçeğinde, sürdürülebilirlik, güzellik, hafiflik ve mutluluğu destekleyecek her türlü fikri ve tutumu cesaretlendirmeyi sürdürecektir.


IV.

Deneyimlerin, bilginin ve projelerin uluslararası düzeyde paylaşımı/takasının güçlendirilmesi ve sıklaştırılması: Kurumsal yapıdan Presedia’ya, Terra Madre ağı ve Gastronomik Bilimler Üniversitesi’nin üstlendiği hareketler – derneğin yanı sıra, oluşturulan fikirler ve projeler için gücünü arttıran bir merkez olarak, Slow Food daha çok uluslararası olma yolunda, dünyada değerli bir varlık göstermenin ötesinde, çok yönlü bakış açısı, tüm taraflara açık, çeşitliliğe saygılı, ve temel değerlere ve belki de yerelde yok edilmeye yüz tutmuş değerleri kucaklayarak varlığını sürdürecektir.

Gıdalarımızdan toprağa, keyiften adil olma duygusuna, mükemmeliyetten günlük alışverişe, ürünlerin tanıtımından eşit haysiyete… 1989 da yola koyulurken bunları hedeflemiştik. Ve Puebla’da 80,000 üyenin temsilcisi olan 5 kıtadan, 49 ülkeden, 414 delegenin varlığı, görüşleri, enerjisi ve hayalleri ile bunu bir kez daha teyit ettik. Teşekkürler.
